What could I possibly write regarding wills, inheritance, and being disinherited?
Our English teacher told us to pick a topic and chose "Wills." (Don’t know why my classmates were looking at me like I was nuts.)
What could I write about with that topic (wills and disinheriting) in mind?

You could write about the importance of a Will. You could check the Intestacy Law for your state and see if you agree with it. Intestacy Laws vary from state to state and you may be surprised to learn what happens in your state to your estate if you die without a Will.
Keep in mind that in some states it is difficult to totally disinherit a child. That is why many people leave $1.00 to prove that they didn’t "forget" about the person but that they did not want him/her to have an equal share.

Are you Italians really that big on inheritance and whatnot? I thought that was just a stereotype.
